RUM OR CACHAÇA ?
CACHAÇA IS MADE DIRECTLY FROM FRESH SUGARCANE JUICE
Unlike traditional Hispanic or English rums, made from a sugarcane residue called molasses, cachaça is made directly from fresh sugarcane juice.
This gives it a natural and authentic taste and brings it closer to agricultural rum produced in the French overseas territories using the same technique.
However, cachaça retains its specificity because it undergoes a particular fermentation and is distilled between 38°C and 48°C, unlike agricultural rum which usually has an alcohol content of 65-75% before being brought to the desired level by adding water.
AGED IN 42 LOCAL WOOD SPECIES
Cachaça is one of the few alcoholic beverages that is not aged in oak. No fewer than 42 types of wood from the Brazilian forest are used to make the barrels and tuns used for aging or storing cachaça.
Each wood gives a characteristic color, scent and flavor, at Tijuca, we have decided to make you discover the extraordinary diversity of aromatic palettes resulting from these different woods.

A CONTROLLED DESIGNATION OF ORIGIN
The name "cachaça" is protected by law and its production is limited to Brazil.
Cachaça is thus an alcohol whose authenticity and the typicality of its geographical origin are strictly regulated. This makes it possible to guarantee its qualities and the characteristics of its terroir of origin as well as to promote the know-how of its producers.
Cachaça belongs to the large rum family, but this Brazilian cousin has a very distinct identity that will seduce you.
TIJUCA spirits come from a subtle blend of different cachaças, developed and refined according to original recipes.
